Ingredients:
- 600g potatoes;
- 1 leek;
- grated Parmesan cheese to taste;
- 100ml milk;
- salt;
- parsley;
- knob of butter;
- speck (smoked ham) to taste.
Procedure:
Begin preparing the leek rolls by boiling the potatoes. Cook them until a fork’s prongs do not easily penetrate the potatoes (1). Put the potatoes in a potato masher and mash them. To the mashed potatoes, add grated Parmesan cheese, salt, milk, a small piece of sautéed leek, and parsley (2).
In a pan with a knob of butter, sauté the cubed speck for a few minutes (3.).
Add the sautéed speck to the potato mixture (4.), then mix all the ingredients and set aside. On a cutting board, cut the leek by making an incision on one side of each individual leaf (the leaf should remain intact) (5.). Dip the leek leaves in boiling salted water (6) and leave them for 5 minutes.
Drain the cooked leek leaves and place two leaves on a cutting board, forming a cross. In the center, place a bit of the potato mixture (7) and fold all sides towards the center (8), forming a little bundle. In a pan, add a drizzle of oil and brown on all sides (9). Place on a serving plate and serve, enjoy your meal!
